Ingredients for 4 persons :
- 3 sachets of 250 g of peas C’ZON fees
- 20 cl of whole liquid cream
- 30 cl of milk,
- Salt pepper,
- Chervil or coriander fresh for decoration.
For the Comté crumble:
- 50 g of Comté
- 50 g of soft butter
- 50 g flour
- 40 g ground almonds
Cream of peas and Comté crumble
Grate the Comté and mix with the flour, soft butter and ground almonds.
Spread this crumble dough in a baking dish and bake for 10 minutes at 200 ° C.
Cook the peas in boiling salted water for 10 minutes.
Break the crumble dough with a fork and put on the grill for 5 minutes.
Break again with a fork and set aside.
Drain the peas then mix with the milk, liquid cream, salt and pepper.
Pass through a Chinese, taste and adjust the seasoning.
Serve hot with the Comté crumble and a few chopped coriander or chervil leaves.
Tips and Tricks
You can cook the peas in sparkling water to keep them a nice color. For a lighter soup, use light cream instead of whole cream.
